We were so excited when we discovered the Aubergine restaurant! Their slogan is "Farm to Table" and that's pretty much exactly what they do. The restaurant is located on Santa Gertrudis road towards San Miguel and can be recognised from the outdoor sign on the left-hand side of the road. Aubergine is the brainchild of Yolanda Torres and Victor Gausch (from Atzaro).
Aubergine's gardens are actually the heart of the restaurant. It has lemon trees, lettuce fields, tomato plants and so much more. The eggs, meat and fish are also local products from the island. The menu varies by the season. The interior is a homey, mint-green colour complemented by lots of white and elements of nature. It's truly a place to relax and enjoy exquisite local cuisine. There is even a small shop for buying a number of products for the house.
